From December to March, truffles grace the tables of the Quercy region, transforming even the simplest dishes into exceptional delicacies. There are two markets close to Belfort-du-Quercy where you can buy some of our famous “black diamond”. The Lalbenque market is held every Tuesday afternoon from December to March, and the Limogne-en-Quercy market is open every Friday morning.
Foie gras, a holiday must-have
December is undoubtedly foie gras month in the Lot. At markets in Cahors, Montcuq, Lalbenque and Castelnau-Montratier, producers showcase this flagship product of Southwestern gastronomy.
You can choose between goose foie gras, renowned for its finesse and delicacy, and duck foie gras, with its more pronounced taste. Foie gras ducks from the South-West with an IGP label are a guarantee of quality and respect for traditional know-how.
For New Year’s Eve, you can buy it directly from local producers or prepare it yourself a few days before the festivities. In any case, allow around 80 to 100 grams per person for a generous starter.
Label Rouge farm lamb from Quercy
Recognized by its characteristic “black glasses”, farm-raised Quercy lamb bears the “Label rouge” and “IGP” labels, a double validation that attests to its high quality. Raised on the Quercy limestone plateaus, fed on mother’s milk, hay and local cereals, it produces fine, melt-in-the-mouth meat that will delight the most discerning palates.
In winter, this exceptional lamb lends itself particularly well to festive cooking and New Year’s Eve preparations. Several options are available to enhance its flavor:

The walnut tart, which you’ll find in many of the department’s bakeries, is the winter dessert par excellence. For a more gastronomic version, dare to combine land and sea with local spices:
- pan-fried scallops with truffle ;
- lobster drizzled with Quercy saffron butter.
A white Coteaux du Quercy, fresh and aromatic, goes remarkably well with these starters.
The main course with the flavours of Quercy
Local produce from the Lot makes for excellent festive dishes:
- Roast capon stuffed with porcini mushrooms and foie gras is the perfect festive poultry dish. Serve with seasonal vegetables (carrots, parsnips, sweet potatoes) and a saffron jus. Allow plenty of time, but the result is well worth the effort!
- Fillet of Quercy lamb in a walnut crust is a more gastronomic option. A truffle sauce, prepared with a good veal stock reduced with Cahors wine and flavored with truffle fragments, sublimates this delicate meat. It is often paired with a creamy gratin dauphinois or mashed celery, for example.
- Quercy pigeon with pan-fried foie gras and porcini mushroom jus appeals to lovers of more assertive flavors. With truffle-flavored mashed potatoes and sautéed mushrooms, it’s an exceptional dish for discerning palates.
A vintage Cahors will accompany these characterful dishes magnificently.
Desserts that celebrate local produce
